The grapes used to make this wine were hand-picked in the early morning, and the fruit was promptly brought to the winery where it was de-stemmed, crushed and placed in small capacity stainless steel tanks for fermentation. We cold soaked the grapes for 3 days, in order to extract color and add to the flavor intensity.During fermentation, our skilled cellar crew performed two pumpovers a day throughout fermentation, which lasted an average of 22 days. The grapes were gently pressed, to grant tannins a luscious profile. The individual varietals were aged separately, in100% French oak barrels (30% new oak) where it aged for 20 months. Six months before bottling, we assembled the final blend, and it stayed in barrel for another 4 months. The wine was filtered and bottled in July of 2018.
This red blend shows the synergy and diversity of Napa & Sonoma terroir. Merlot from Oak Knoll, Cabernet Franc from Alexander Valley, Petit Verdot from Atlas Peak and Cabernet Sauvignon from five distinct sub-appellations, both high elevation mountain blocks and valley floor vineyards.
Bud break arrived early this year, beginning around Valentines Day, and it was a cool and foggy season through August. We had no excessive heat in July, August or September, which provided for a longer hang time for the grapes. The grapes ripened uniformly and calmly at their own pace, yields were a tad higher, and the flavors are phenomenal.
